Weight of Cattle

On the hoof   =   1,200 to 1,800 pounds.

Dressed   =   780 to 1,080 pounds.

A side of dressed beef weighs from 400 to 550 pounds.

Retail prices for Choice beef and for all fresh beef set records in December, 2011.  The average retail price of Choice beef for December  was $5.02 per pound, up from $5.00 in November.

  • On the hoof   =   $1.59 per pound processed and ready to eat.
  • Whole dressed beef   =   $2.99 per pound processed and ready to eat.
  • One half dressed beef   =   $3.19 per pound processed and ready to eat.

 Deposits

  • A check for $100 is due when we take your beef to the processor.
  • A check for the balance is due when your beef is ready.
