How to Cook the Perfect Steak
Preheat the grill or heavy pan thoroughly BEFORE COOKING. A hot grill or pan will sear the outside and produce a tastier, juicier steak.
Let the meat come to ROOM TEMPERATURE before cooking. This ensures even cooking throughout. If you cook frozen or cold steak, the outside will burn before the inside is properly cooked.
Rub the steaks with a little oil before cooking to keep the meat moist and prevent sticking. Season the steak with a little freshly ground pepper before cooking. Add salt after cooking.
Use tongs to turn the steak while cooking. If the steak is pierced with a fork, juice and flavor will be lost.
Take the steak off the grill or pan SLIGHTLY EARLY because the temperature will continue to rise about 10 degrees.
Put the steak loosely in foil and let it rest a few minutes before serving. This gives time for the juices and flavor to distribute evenly throughout the steak.
